Well, tonight I had some black beans on hand that I had soaked the other day. I *planned* to make a new Cuban Black Bean recipe but that didn't work out because I didn't have enough time for it! (the recipe is time consuming and super involved) so here is what I decided to do with my black beans...(I don't even know exact measurements...just adjust to how many people you are feeding/how much you like certain spices, etc.)
Ingredients:
Black beans, rinsed, soaked, rinsed, and then cooked! (you could use canned black beans as well)
Extra Virgin Olive Oil
Onions
Garlic
Spinach
Cumin
Paprika
Salsa
What I did with all of those tasty ingredients:
I put the olive oil in a skillet on the stove and sauteed the onions with the garlic.
Then I added in the spinach and stirred until wilted.
Next I added in the cooked black beans and mashed them with a potato masher.
Then I threw in quite a bit of cumin, and some paprika.
And lastly, I added some salsa and stirred the mixture all up until combined!
I had been planning to use the mixture as a filling for burritos but I forgot when I was making my tortilla chips to save some of the tortillas! so we just dipped our homemade chips in the mix ;-) yummy!
Optional Ingredients/Toppings:
tortillas for chips
cilantro
sour cream
cheese
salsa
avocado
Directions for chips:
Take tortillas and brush them with extra virgin olive oil both sides and sprinkle with sea salt.
Stack them so they are aligned and cut them into quarters.
Place the quarters onto baking pans and bake in the oven for about 6-10 minutes at 400 degrees(I don't really know how long they take...I usually just check on them periodically - but make sure you check a lot because they can burn easily!)
It was really tasty! I had sour cream and plenty of cilantro on top of mine. (I love cilantro:-)) Enjoy!
