What's for Dinner? Famous Butter Chicken

Here is a recipe I make often because it's super simple! My lovely sister Lynea gave me this recipe :-)

Famous Butter Chicken

Ingredients:

2 eggs, beaten

1 cup whole wheat bread crumbs* or whole wheat cracker crumbs

1 teaspoon garlic powder (I like extra…)

Salt to taste (I use unrefined sea salt)

4 chicken breasts

½ cup butter (1 stick), cut into pieces

Pepper to taste

Optional: herbs and seasonings like parsley, basil, sage, etc.

Directions:

1. Preheat oven to 375.

2. Place eggs in shallow bowl and beat with fork.

3. Mix bread crumbs, garlic, salt, pepper, and optional seasonings in another shallow bowl.

4. Dip chicken in eggs, then dredge in the crumb mixture to coat.

5. Arrange coated chicken in a 9x9 inch baking dish. Place pieces of butter on top of and around chicken.

6. Bake 25-35 minutes, or until chicken is no longer pink.

7. ENJOY!

*To make your own homemade bread crumbs, let 3 slices of bread sit out until stale and hard (all day or overnight usually does it). Then crush the stale bread until crumbs are fine. (makes 1 cup)
